Japchae is a popular Korean dish often served on special occasions. Made with glass noodles, various vegetables, and marinated beef, it’s known for its vibrant colors and delightful flavor. Here’s a detailed guide to making japchae, from sourcing ingredients to cooking.

 

1. Ingredients for Japchae

To make japchae, you will need the following:

Main Ingredients

Sweet potato noodles (glass noodles): 200g

Beef (thinly sliced): 150g

Spinach: 100g

Onion: 1 (thinly sliced)

Carrot: 1/2 (julienned)

Red/yellow bell peppers: 1/2 each (thinly sliced)

Shiitake mushrooms: 4 (thinly sliced)

Eggs: 2 (for garnish)

Seasoning Ingredients

Soy sauce: 4 tablespoons

Sugar: 2 tablespoons

Minced garlic: 1 tablespoon

Sesame oil: 2 tablespoons

Cooking oil: as needed

Salt: a pinch

Pepper: a pinch

Sesame seeds: 1 tablespoon

Ingredient Tips:

Sweet potato noodles are labeled as “Glass Noodles” or “Dangmyeon” in Asian grocery stores.

Choose fresh vegetables for the best taste and texture.

 

2. Preparing the Ingredients

Prepare the noodles: Soak noodles in cold water for 30 minutes, then boil for 6–8 minutes. Rinse with cold water, drain, and mix with 1 tablespoon sesame oil and 1 tablespoon soy sauce.

Marinate the beef: Slice beef thinly and marinate with 1 tablespoon soy sauce, 1 teaspoon sugar, 1/2 tablespoon minced garlic, 1 teaspoon sesame oil, and a pinch of pepper.

Prepare vegetables:

Blanch spinach briefly, rinse in cold water, squeeze out excess water, and season with salt and sesame oil.

Slice onion, carrot, bell peppers, and shiitake mushrooms.

Make egg garnish: Beat eggs, cook into a thin sheet, cool, and slice into thin strips.

 

3. Cooking Japchae

Stir-fry ingredients:

Heat oil in a pan and stir-fry onion, carrot, bell peppers, and mushrooms separately. Lightly season with salt.

Stir-fry the marinated beef until fully cooked.

Mix everything together:

In a large bowl, combine noodles, stir-fried vegetables, beef, and spinach.

Add 2 tablespoons soy sauce, 1 tablespoon sugar, 1 tablespoon sesame oil, 1/2 tablespoon minced garlic, and a pinch of pepper. Mix thoroughly.

Garnish and serve:

Place the japchae on a serving plate, garnish with egg strips and sesame seeds.
